Mustard mackerel lettuce wraps.

As much as I love beautiful seafood tinned in oil, I’ve been craving exploring different flavors of canning liquid lately.

This beauty from Conservas Santos in Portugal is skinless mackerel fillets in a mustard sauce. I was expecting them to be in a thicker mostly mustard situation, but it’s a beautiful mustard vinaigrette that somehow doesn’t break the fish down at all. There are 5 firm, meaty pieces of fish in the tin which immediately made me think to put them on leaves of little gem lettuce and construct some lettuce wraps with whatever was around.

A bit of raw red onion, avocado, tomato, some good cranks of black pepper and then drizzle all of the delicious mustard sauce over the top and lunch is served. Next time I’d add a pickled item for even more acid but otherwise it was 2 thumbs up.
