Fishwife anchovy caeser.
A lovely bread customer today taught me about jidori chicken from our favorite @featherbladebutcher, so I stopped on my way home from working the farmers market and grabbed one. Which made me think of making ceaser salad. Which reminded me I just got the @fishwife anchovies and they posted a ceaser recipe on their site.
So here we are.
I spatchcocked the chicken and it was amazing. Thanks @lymanporchcatering for introducing me to this type of chicken!
The anchovies are delicious (also available @wholefoods now), and this recipe uses the whole tin between the dressing and the breadcrumbs which is 👍. I find that if I pop a tin and don’t need them all they end up dying in a Tupperware in my fridge because I forget about them, so I love a full use recipe.
The star of the show are these anchovy breadcrumbs that will now go on everything. (Just panko, olive oil, anchovies and then lemon zest when they come off the heat).
The anchovies are quite salty (in the good way), have a good depth of flavor, and a nice texture.
They are wild caught from an MSC certified fishery on the Cantabrian coast, and are hand packed in Spanish EVOO.
