How about some prehistoric tinned fish?

Inspired by the tasting I did last week at the inaugural Tinned Fish Club Las Vegas meeting with fellow founding members @erica_sbell and @embaddock, I couldn’t wait to order up some of these incredible spiced Garfish and dive in again.

My first time trying garfish which is a needle nose prehistoric looking fish, I would describe it as a firmer and cleaner version of a sardine and one I will order anytime I see it now. It was not deboned but no bones are detected while eating it, which is the problem I always run into with bone-in sardines. There is absolutely no fishiness and the texture is great. This was also my first time trying Portuguese producer @conservasatimanel and after falling in love with these I’ve ordered a few of their other tins to try (mussels in escabeche! Stay tuned).

This particular preparation is salty in the best way, and has a great lingering heat from the pepper infused olive oil.

This time I paired it with our @5098bread lemon focaccia, but to be honest it’s really perfect the way I first tried it on a saltine with great butter since the fish in the tin is already perfectly balanced.
