Mussels on rye.

When I bothered @wilstoooone endlessly to please add a Caraway Rye to our menu @5098bread this is all I had in mind. Thank god he relented.

Toasted to bring out the flavor even more, slathered with crème fraiche from one of my favorite creameries @bellwetherfarms, topped with a whole can (minus the 2 that I have to eat the second I pop the tin) of my favorite tin of mussels from @jose.gourmet. Add a little scallion and you’re good to go.

Jose gourmet consistently delivers, no matter what can you grab. I love the mussels because the marinade (escabeche) they live in is bright and vinegary in the best way. The mussels are never mealy, and the tin stands alone or is a great complement to smoked tins due to its higher acid profile.
