Alalunga Hake Cheeks in Olive Oil
When I talk about an artisanal product, this tin takes the cake.
Translated to hake “cheeks”, and not to be confused with the collar, these pieces are actually the small piece of meat under the jaw and chin of the fish. The fatty wonderful neck portion. Only one can be harvested per fish, and when I think of the skill it takes to butcher these little jewels in such a clean manner I can’t get over it. There are approx 8-9 pieces per tin, which means each tin takes 8-9 hake fish to produce!
Pro tip: take the cheeks out of the tin and put them on a plate. Put the tin oil in a bowl or cup and whisk it to make a thick emulsion. if you have a milk frother for your coffee these work great to really froth it up! Pour the emulsion over the cheeks and enjoy. (You can do this with any tin oil/escabeche to make a thicker sauce to coat and of your tinned goodies).
