Have you ever tried garfish, which is a needle nose prehistoric looking fish?

I would describe it as a firmer and cleaner version of a sardine and one I will order anytime I see. It is not deboned but no bones are detected while eating it, which is the problem I always run into with bone-in sardines. There is absolutely no fishiness and the texture is great. In additon, this is one of the most beautiful tins to open. The fish are so silvery, and canned so skillfully that they look perfect in the tin.

This particular preparation is salty in the best way, and has a great lingering heat from the pepper infused olive oil.

I paired it with lemon focaccia inthe images, but to be honest it’s really perfect the way I first tried it on a saltine with great butter since the fish in the tin is already perfectly balanced.
