IASA Grilled Branzino in Olive Oil

Branzino (also knows as Mediterranean sea bass) is known for its pristine white fillets and delicate, slightly sweet flavor.
IASA (Ittica Alimentere Salerno from Pellezzano Italy) make this beautiful tin with sustainably fished branzino caught off the coast of Campania. The fish are cleaned, gently grilled and hand-packed in tins with mild olive oil, which allows the very subtle smokiness and beautiful flavor of the fish to come through. Their recipe is an homage to the tradition of fisherman grilling fresh-caught branzino and drenching the fillets with olive oil. This tin eats like a fresh caught and cooked fish, rather than a tinned fish!
The beauty of this tin calls for simple preparations - serve on grilled bread drizzled with olive oil and sprinkled with flaky sea salt, or flake and put over lightly dressed greens or giant corona beans with an herby salsa on top. Or…. just eat it out of the tin on crackers ;)
