Ramon Pena Razor Clams in Brine

I will admit razor clams were one of the last tinned fish items I jumped into. I couldn’t wrap my head around how one would effortlessly cut a long clam like this into pieces to put on a cracker or bread, as I pictured the clam being tough or chewy. These razor clams are anything but that. They are soft and tender, with a rich buttery mouthfeel and the freshest ocean brine notes. They are larger than other brands I’ve had, and you definitely could dump the tin out and cut the clams in half if you’d like, but I like their wild look as a whole piece. These ones in particular seem to have a crab like flavor…total luxury.
I would dump these out onto a plate and eat one plain, then try drizzled with olive oil, possibly hit with a splash of sherry vinegar or lemon juice. You will likely be tempted to not do anything at all to them though. Just close your eyes and imagine you are on the coast of Spain :)
