Santa Catarina Tuna Filet with Ginger
The coins of ginger in the bottom of this tin add a unique flavor that I feel lends well to Asian preparations. I like to use this tuna in my “Endless Options Tinned Fish Bowl”, which if you haven’t seen is just basically a tinned fish version of a poke bowl. Use whatever you have on hand (avocado, nori, cashews, jarred fried shallots, pickled something, mayo, wasabi, soy….etc).
Santa Catarina is heir to an old cannery tradition of the Sao Jorge Island, one of the Portugeuse islands in the Azores. All of their tuna is caught in the Azorean Sea using pole and line method (1 man, 1 rod, 1 hook, 1 fish), and all of the products they include in their tins (onions, parsely, etc) are grown on the island and harvested by hand. All of the fish are cleaned manually and the tins are packed by hand as well.
Each tin is wrapped in paper that includes a recipe for some type of seafood (use google translate and try!).
